Tomato Salsa

Fresh salsa is a great recipe to make whenever you have a surpluss of tomatoes. I’ve had so many tomatoes that I add them to almost every meal. Freezing ripe tomatoes is a great option to preserve the freshness store them for later use. They make an excellent addition to soups, stews or roasting with vegetables in the oven. Tomatoes are very high in vitamin C, vitamin A, vitamin K and promote healthy skin. 

Ingredients:

4 cups of tomatoes

1 tbsp cilantro ( finely chopped)

1/2 cup of chopped red pepper

1 tbsp of chopped onion

1 peg of garlic ( diced )

1 ripe lemon juiced

1 jalapeno pepper sliced

 

dash of Himalayan salt

Directions:

1. Place the tomatoes in a blender and chop on a low speed.

2. Add the mixture to a mixing bowl, then add the remaining ingredients. Mix together and allow the seasoning to infuse the tomatoes.

3. Pour in a glass jar and refrigereate. Store for a few days. Enjoy with your favorite chips or with a meal.
